Well the menu has been finalised and sorted out with the Outfitter and will be ready for us when we arrive…
Here follows a description of the men(so everyone has an idea as to what we will be surviving on!), along with the Meal Rota (I have this laminated and will be bringing it along with us)…Meal rotas only include breakfast and dinner!!
January 1st (Rig Day)
Breakfast / lunch …on own before getting shuttled up..
Dinner: Rib eye steaks, steak sauce, red potatoes & mixed greens for 16, 4 tomaotes, 4 avocadoes, dressing / carrot cake (already made): Cook Crew 1
January 2nd
Breakfast:French toast / Bacon: 3 loaves texas toast, syrup, 5 lbs bacon, 2 canteloupe, 1 bunch bananas, juice: Cook Crew 2
Lunch: Sammies: 2 loaves bread, mayo, mustard, pickles, pepperonconi, 2 lbs sliced turkey, 1 lb sliced roast beef, 1 lb sliced ham, 1 lb cheddar cheese, 1 lb swiss cheese, cookies
Dinner: Salmon / mashed potatoes: 6 lbs salmon, instant mashed potatoes for 16, tarragon (in spice box), canned green beans for 16 / Chocolate pudding: Cook Crew 3
January 3rd
Breakfasst: Eggs benedict / Canadian bacon: 3 dozen eggs, hollandaise sauce, 3 pkgs English muffins, butter, 4 lbs Canadian bacon, juice: Cook Crew 1
Lunch: Chicken wraps: 2 pkgs tortilla, canned chicken for 16, mayo, relish, celery, 1 red onion, 1 lb sliced provolone cheese, 1 lb sliced cheddar cheese, pringles
Dinner: Spaghetti / Meatballs: Appetizers: cheese and crackers / 6 lbs meatballs, spaghetti noodles for 16, 2 French sticks, minced garlic, butter: Cook Crew 4
January 4th
Breakfast: Oatmeal / couscous / fruit: Oatmeal for 16, couscous for 16, canned pears, canned peaches, juice: Cook Crew 3
Lunch: Mexican wraps: 2 pkgs tortillas, 2 cans black beans, 2 cans kidney bean, 2 cans pinto beans, 1 can corn, 1 can chopped tomatoes, taco seasoning, 2 cans green chillies, 2 cans black olives, guacamole (drain all cans, mix together, add taco seasoning)
Dinner: Curry chicken / rice: 5 lbs cubed chicken, 10 potatoes, curry sauce, 2 cans coconut milk, instant rice for 16 (cook chicken and potatoes until alomost done, put a little water in bottom of pan so it doesn’t stick, add curry sauce and coconut milk and heat)..serve over rice / mint: Cook Crew 2
…they’ve even included instructions for those not used to being anywhere near a stove!!
January 5th
Breakfast: Bagel / fruit: 3 pkgs bagels, 2 cream cheese, sliced apples and oranges, juice: Cook Crew 4
Lunch: Sammies (as above except pringles instead of cookies)
Dinner: Jambalaya / sausage: Appetizers: sliced apples with peanut butter / Jambalaya for 16, 3 cans tomatoes, 5 lbs pre-cooked dinner sausage, 2 French sticks, butter, roasted re bell peppers (chop and add to jambalaya) / Butterscotch and chocolate pudding: Cook crew 1
January 6th
Breakfast: Oatmeal / Couscous / Fruit: as above: Cook crew 2
Lunch: Hummus / cheese: 2 pkgs pitta bread, hummus for 16, 1 lb sliced cheddar cheese, 1 lb sliced provolone cheese, 2 cans black olives, olive oil
Dinner: Pesto pasta / bruschetta: Angel hair pasta for 16, pesto, bruschetta for 16, roasted red bell peppers, 2 French sticks, butter, minced garlic / Ginger bread (Dutch Oven): Cook crew: 3
January 7th
Breakfast: Scrommlets / Bacon: 3 dozen eggs, 2 cans mushrooms, 5 lbs bacon, 3 pkgs English muffins, butter, 2 lbs cheddar cheese (grate), juice: Cook crew 1
Lunch: sammies: as above with pringles and cookies
Dinner: Beef stroganoff / bread: Appetizers: mixed nuts / 5 lbs cubed beef, 4 onions, paprika, 4 cans cream mushroom soup, 1 can mushrooms, 5 cups sour cream, egg noodles for 16 (cook meat and onion until done, add rest of items, heat) (cook noodles according to direction, add last) / Carrot cake (Dutch Oven): Cook crew 4
January 8th
Breakfast: Oatmeal / Couscous / Fruit: as above: Cook crew 3
Lunch: sammies: as January 7th
Dinner: Thai Noodle Stir Fry: Thai noodles for 16, soy sauce, stir fry sauce, instant rice for 16, frozen stir fry veggies (all in 1 bag) / Vanilla pudding: Cook crew 2
January 9th
Breakfast: Oatmeal / Couscous / Fruit: as Janaury 8th: Cook crew 4
Lunch: Tabouli Salad: 2 pkgs tortilla, tabouli for 16, 4 tomatoes, 3 cucumber, 1 lb sliced cheddar cheese, 1 lb sliced swiss cheese
Dinner: Steak stir fry: Appetizers: cheese and crackers / 5 lbs cubed steak, soy sauce, stir fry sauce, instant rice for 16, frozen stir fry veggies (all in 1 bag) / Brownies (Dutch Oven): Cook crew 1
January 10th
Breakfast: Bagels / fruit: as January 5th: Cook crew 2
Lunch: Hummus / cheese: as January 6th
Dinner: Pesto pasta / bruschetta: as Janaury 6th / S’mores (marshmallow, graham crackers, hershey bars): Cook crew 3
January 11th
Breakfast: Pancakes / bacon: pancake mix for 16, syrup, 5 lbs bacon, juice: Cook crew 1
Lunch: Salami / crackers: 5 lbs sliced salami, 3 boxes crackers, 2 blocks cheese, trail mix, cookies
Dinner: Chicken enchiladas: Appetizers: pesto dip with crackers / 4 lbs cubed chicken, 1 pkg corn tortilla, enchilada sauce, 2 lb block cheese (shred), spanish rice for 16, 3 cans diced tomatoe, 2 cans green chillies, 2 cans black olives, salsa / Mints: Cook crew 4
January 12th
Breakfast: Pancakes / bacon: as Janaury 11th: Cook crew 3
Lunch: Chicken wraps: 2 pkgs tortilla, canned chicken for 16, mayo, relish, 1 lb sliced provolone cheese, 1 lb sliced cheddar cheese, pringles
Dinner: Hamburger tacos: Appetizers: chips and sala / 5 lbs hamburger, taco seasoning, 1 pkg corn tortilla, spanish rice for 16, 2 cans green chillies, 2 cans black olives, guacamole, salsa / No bake cheese cake: Cook crew 2
January 13th
Breakfast: Oatmeal / Couscous / Fruit: as above: Cook crew 4
Lunch: Salami / crackers / cheese: 5 lbs sliced salami, 3 boxes crackers, 2 blocks cheese, pringles, cookies
Dinner: on own-back in Flagstaff
Thus ends the trip and the fine feeding along the way…
Notes:
- All breakfast will contain coffee, tea, juice and hot coco with dinner…(someone may want to bring some real tea bags!!)
- **will add produce for sandwiches if any room is available in your cooler**
- All lunches will be communal efforts
- every cook crew should have 6 meals to look after: 3 breakfasts and 3 dinners
